Always stuck with too many leftovers from Christmas day? We have a couple of ideas that mix up the usual traditions by using all your yummy leftovers
Turkey and Potato Curry
- 1 tbsp sunflower oil
- Various vegetables (onion, pepper, garlic)
- 300g leftover turkey
- Can of chopped tomatoes
- 2 tbsp curry paste & mango chutney
Heat the oil in a pan on a high heat, cook onions and pepper until soft and slightly brown. Add the garlic and curry paste for a further 2 minutes. Stir in the chopped tomatoes and 150ml of water. Bring to the boil and bubble for 5 mins. Bring the heat down, add the turkey and potatoes and cook for a further 3 minutes. Finish with the mango chutney. Serve with rice, naan or chips and add coriander as an optional finishing touch.
Christmas Pudding Ice Cream
- 1 litre tub vanilla ice cream
- 200g leftover Christmas pudding
Put the ice cream in a food processor until smooth, crumble and fold in the Christmas pudding. Place in a tub and freeze for at least 2 hours. Serve with toffee sauce.
